Our name pays homage to Ilo, who was an orphan and self-made man, and his dedication to the craft is reflected in every bottle we produce.

In the picturesque Khashmi region, Queen Tamar herself ordered the planting of a vineyard by the skilled monks of David Garejel. The locals quickly honed their craft, mastering the art of vineyard care and producing high-quality Saperavi wine. Today, we proudly incorporate the regal symbol of Queen Tamar in our branding, representing the legacy of this exceptional Georgian wine-making region.

Grapes are harvested in village Khashmi Protected Designations of Origin (PDO), from our own 60-year-old vineyards. It should be mentioned that making Saperavi in Qvevri is not only the technology that excites, but right temperature in the vessel allows, to perfectly ferment and greatly condition the wine.

We are proud to announce that our Saperavi Khashmi 2020 has received multiple accolades, including a Bronze medal at the prestigious Decanter World Wine Awards 2022, the world's largest and most influential wine competition held in England. Additionally, this exquisite vintage has also received a Bronze medal at the International Wine & Spirit Competition, a testament to the unparalleled expertise and dedication of our winemakers.

Georgian wine history

Georgian wine is renowned for its unique and ancient wine-making traditions that date back to 6000 BC. The most famous of these include Saperavi, Rkatsiteli, and Mtsvane, which are used to produce red, white, and amber wines respectively. Wine is made using Georgian ancient traditional technology, in “Qvevri” the clay vessel that is buried underground.

In general, qvevri wines are made according to the following process:

Maceration: Traditional Georgian winemaking traditions involve crushing grapes and placing the grape juice, along with the grape skins, stems, and pips (collectively known as chacha), into clean qvevri lined with beeswax for fermentation.

Alcoholic and malolactic fermentation: After an initial maceration period, the mixture undergoes both alcoholic fermentation (starch is converted to alcohol) and malolactic fermentation (malic acid is converted into lactic acid and carbon dioxide). Alcoholic fermentation produces the alcohol, while the malolactic fermentation process decreases acidity, adds flavor, and stabilizes wine.

Aging and decanting: Once both fermentation processes are complete, the qvevri are covered with lids and sealed with clay or beeswax. After about six months, the wine is decanted for bottling. (Or in the case of some red wines, placed in a different, clean qvevri for continued aging.)

This method has been recognized as a UNESCO Intangible Cultural Heritage of Humanity.
